Zoodles tossed with my FAVORITE Chimichurri sauce

Have you tried making Chimichurri at home?

OMG…you MUST try this sauce!

Incredible over chicken, fish, or beef…and equally amazing tossed with veggies!

This afternoon I tossed zoodles (Cleanfoodcrush.com/spiralizer), sliced tomatoes, red onion, with this fresh Chimichurri sauce – and a sprinkle of fresh Parmigiano.

Ingredients:

  • 1 large bunch flat leaf/Italian parsley, large stems removed
  • 8 cloves garlic, minced
  • 3/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar, or apple cider vinegar
  • 2 Tbps diced red onion
  • 1 Tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • 1/2 tsp sea salt

Instructions:

Place all ingredients in a food processor or high powered blender.

Pulse until you have a thick, smooth consistency.
