Gorgeous Fresh Hummus Salad
This freshly made hummus with added greens is an impressive appetizer to serve throughout those Summer entertaining months! Use that #inseason fresh produce!
Makes 3 servings
Ingredients:
Homemade Hummus:
- 1 15-ounces of chickpeas, rinsed and drained
- 1/2 cup of tahini
- 1/4 cup of fresh lemon juice
- 3 fresh cloves of garlic
- 2 Tbsp extra virgin olive oil
- 2-3 Tbsp water
- sea salt and freshly ground black pepper
Salad:
- large handful of mixed greens
- 1 1/2 cup ripe cherry tomatoes, cut into halves
- 1 small red onion, thinly sliced
- 1/2 cup fresh sliced radishes
- 2 Tbsp extra virgin olive oil
- 1 Tbsp raw honey
- juice of one lemon
- sea salt and pepper to your taste
Instructions:
To make the hummus, place the chickpeas in a blender or food processor.
Add the tahini, garlic, olive oil, lemon juice, water, salt and pepper. Blend until smooth.
In a large glass bowl add all salad ingredients.
Add 1Tbsp of extra virgin olive oil, fresh lemon juice and season with salt and pepper to taste. Toss gently to combine.
To serve, spread the hummus with the back of a spoon onto a large plate.
Top with the salad and enjoy with friends!
