Cottage Cheese Flatbread Pizza

This mouthwatering Cottage Cheese Flatbread Pizza recipe is not only ridiculously delicious, but it’s also incredibly easy to make, requiring just a few simple ingredients and minimal prep time.

Plus, it’s packed with nutrients: gluten-free, low in carbs, and high in protein thanks to the cottage cheese and eggs.

Depending on how you make yours – there’s right around 40 Grams of protein in this pizza!

This pizza crust is made with a creamy cottage cheese mixture, which provides a rich and satisfying flavor without any of the heaviness of traditional pizza dough.

Top it with your favorite ingredients, like nitrate-free pepperoni, fresh mozzarella, and a drizzle of pizza sauce, and you’ve got a quick pizza night at home!

You can experiment with other favorite toppings such as:

Go Supreme: bell pepper, sliced mushrooms, black olives, and cooked crumbled ground beef!

Try Margherita; dollops of fresh mozzarella, cherry tomatoes, and fresh basil leaves.

🧀 Cheese Please:
Instead of buying pre-shredded cheese, I like to find a block of grass-fed or local cheese ON SALE and shred it myself…. or better yet: enlist one of the kids for this duty.

Most pre-shredded varieties are coated in strange things (anti-caking & clumping) that actually interfere with the natural texture and the beautiful melting qualities.

Cellulose anyone? Turn your package of pre-shredded cheese over and read through the actual ingredients.

You may be surprised to see the additives that are there to keep the shreds looking nice in the package.

Ingredients:

  • 1 cup cottage cheese
  • 2 Tbsps gluten-free flour or oat flour
  • 2 large eggs, room temperature
  • sea salt and ground pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder

Toppings:

  • 2 Tbsps of pizza sauce, or to taste
  • 1/4 cup freshly shredded mozzarella
  • nitrate-free pepperoni

Instructions:

Preheat your oven to 400 degrees f. and line a sheet pan with parchment paper.

In a medium bowl, add the cottage cheese, flour, eggs, and seasonings.


Whisk until smooth.


Pour this mixture on your prepared sheet pan and spread in a round (as shown) and bake for 10-12 minutes.


Carefully remove from the oven then add your toppings.


Continue to bake for 4-5 minutes or just until melty.

Enjoy while hot!
