Creative Fro-Yo Fruit Bark
If you allow the kids to make yogurt bark with you this afternoon, it will be frozen, and ready to eat after dinner tonight.
Kids LOVE to help in the kitchen…and they are more likely to eat their own creations!
Makes 6 servings
Ingredients:
- 2 cups plain Greek, or coconut yogurt
- 1 Tbsp all natural vanilla extract
- 2 Tbsps raw honey
- 6 fresh strawberries, diced
- 1/2 dragon fruit, chopped into bite sized pieces
- 1 kiwi, peeled and diced
- 1/4 cup blueberries
- 1/4 cup raspberries
Instructions:
Line a large baking sheet with parchment paper.
In a mixing bowl add yogurt, honey and vanilla. Whisk until well combined.
Pour the yogurt onto the baking sheet and spread it with a spatula to level it out.
Sprinkle with the chopped fruit, and berries and freeze for 3-4 hours to overnight.
Remove from freezer for 3 minutes, then chop into bark, and serve, or wrap in plastic wrap and store in the freezer for up to 2 weeks.
