Cucumber Christmas Trees🎄
We’re just over here playing with our food again!
What are you up to today? Just a few more days until Christmas… Hope you make some time to enjoy a few simple pleasures this holiday season!
These cucumber trees are really fun for the kids to assemble, so get them in the kitchen making something to balance out all those cookies & sugary treats. ❤
Makes about 8 servings
Ingredients
- 8 oz cherry tomatoes
- 2 English cucumbers
- 2 slices of yellow cheddar cheese
- 3-inch bamboo skewers
- mini star cookie cutter
Instructions:
To prep:
Using a very sharp knife, or a mandoline set on the thickest setting, carefully slice your cucumbers into 1/4-inch slices.
Sprinkle each slice with a tiny pinch of salt, to help it bend when creating your trees.
Meanwhile, using a mini star-shaped cutter, cut stars from the cheese slices.
Slice your cherry tomatoes in half to create the bottom of the trees.
Pat your cucumber slices dry with a paper towel before assembling your trees.
To assemble:
Start at one end of the cucumber slice and gently fold it back and forth; begin with small folds and gradually bigger folds with each one, until you have created a pine tree shape as shown in the photos. Insert a skewer through the middle to thread it from top to bottom. Separate and arrange the folds gently, to make them look more authentic.
Push the skewer into a cherry tomato half, cut side down to create stability for your tree on the bottom.
Add a cheese star to the top of your tree.
Repeat with remaining ingredients; arrange the trees on a platter and serve immediately!
