Variations/Substitutions
These bars are very versatile. Use whatever vegetables or cooked meat you have at home. Don’t like peas?
Change the meat: Substitute ham, sausage, or cooked crumbled beef for the bacon.
Change the vegetables: Use cooked, chopped asparagus, broccoli, cauliflower etc. instead.
Even higher protein: Add additional Eggs or additional Cottage Cheese for more protein. You’ll need to increase the cooking time slightly.

These are the flavorful and nutritious ingredients that come together to make this cottage cheese egg bake delicious.

- 8 large eggs, or 2 cups of liquid egg whites
- 1 cup Cottage Cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup hemp seeds
- 1 cup frozen peas (thawed)
- 1 red bell pepper, seeded and finely chopped
- 4 green onions, chopped
- 6 slices cooked nitrate-free, high-quality bacon, crumbled
- sea salt and ground black pepper, to taste
How to make Cottage Cheese Egg Bake:
Preheat your oven to 350°F and line a 9×9, (an 8×8 or anything with similar capacity will work also) with parchment paper, leaving some hanging over the sides for easier removal. Lightly sprayed the parchment with avocado oil.

In a large bowl, add the eggs, hemp seeds and cottage cheese and whisk them together.

Add in the peas, peppers, and onions, and stir to combine with the beaten egg and cottage cheese mixture. Season with a very small pinch of sea salt and pepper.

Pour the cottage cheese egg mixture into the casserole pan.

Sprinkle the top evenly with cooked crumbled bacon, then bake for 30-35 minutes, or until the center is set.

Allow to cool for a few minutes, then slice into squares and serve or store for later.

- Don’t over bake! You want the middle to have just set, otherwise the edges could be overdone.
- Don’t add too much salt…the bacon and cottage cheese are already plenty salty.
- If you add more eggs or cottage cheese to increase the protein, then you will also need to increase the cooking time.
Perfect for Meal Prep:
I make this high protein egg bake in a 9 x 9 baking dish and then cut it into 8 or 9 bars that I can eat throughout the week. Another idea is to make them in a silicone muffin tray. They stay good in the fridge if wrapped and sealed well for up to 5 days. Reheat in the air fryer, microwave, oven, or enjoy it cold!

Is this recipe freezable?
Yes! This cottage cheese and egg bake freezes beautifully. Just reheat in the microwave using 10 second bursts until heated through.
Why is my egg casserole bake watery?
There could be two reasons your casserole is watery. One, you used a lot of vegetables that contain a lot of water. In this case, my suggestion would be to cut back on the watery veggies a bit. The other reason could be that you didn’t cook it long enough. Make sure the center is no longer jiggly before taking it out of the oven.
Is the cottage cheese supposed to melt?
No, the cottage cheese will not completely melt, although it should get a softer texture. If you prefer not to have the cottage cheese lumps, you could blend the cottage cheese in a blender before mixing it with the eggs.
Can I make this ahead of time?
Absolutely! These egg cottage cheese bake is perfect to make the night before so you can serve a group in the morning! It also freezes well if you want to make a large enough batch to have breakfast for several months!
