Honey-Chipotle Chicken Bowls ðŸ˜

Deliciousness coming at you from every direction!

This entire recipe is just a darn GOOD one! I’ve already made it twice this week ☺

Incredibly flavorful honey chipotle chicken + lots of fresh veggies + the homemade dressing tops it off PERFECTLY! You’ll be making it over and over.

This chicken marinade is SO absolutely worth the effort! I promise! Set some time aside to get this flavor party happening!

This entire recipe calls for lots of fresh citrus juice. I really recommend juicing the fruits yourself for absolute best flavor and results! Makes a world of difference!

Honey-Chipotle Chicken Bowls are packed full of our FAVORITE foods while providing an impressive balance of macronutrients and micronutrients!

These meal prep bowls last for up to 4 days in the fridge, and they are great eaten cold. Add your avocado and dressing immediately before serving.

Makes 4 servings

Ingredients:

Chicken:

  • 1-1/2 lbs chicken breast or tenders
  • 1 Tbsp avocado oil or olive oil

Marinade:

  • ¼ cup fresh squeezed lime juice
  • ¼ cup fresh squeezed orange juice
  • 1 tsp chipotle powder
  • 2 tsps sweet paprika
  • 2 tsps sea salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 2 Tbsps raw honey

Dressing:

  • ½ cup tahini
  • 3 chipotle peppers in adobo
  • 3 cloves fresh garlic
  • ¼ cup green onion
  • ¼ cup cilantro leaves
  • ¼ cup extra-virgin olive oil
  • 1/2 tsp sea salt
  • ¼ cup water
  • ¼ cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lime juice

Bowls:

  • Grains: cooked quinoa or brown rice
  • Greens: arugula, romaine, mixed greens, or baby spinach
  • Veggies: cherry tomatoes, avocado, cucumber, or red onions

Instructions:

To prepare the chicken:

Chop the chicken into bite sized cubes and transfer to a sealable container or washasble/reusable bag.

To make the marinade:

In a small bowl, add all the marinade ingredients and whisk until well combined.

Pour the marinade over your chicken. Seal, and gently shake to get all pieces of chicken evenly coated with your marinade. Allow the chicken to marinate in the fridge for at least 1 hour – to overnight.

Cook the chicken.

Discard all marinade.

Heat a 1 tbsp of oil in a large skillet over medium heat. Add the marinated chicken in a single layer and cook undisturbed for about 3 minutes. Stir and continue to cook until chicken is nicely browned and cooked through, about 8 minutes in total.

To make the dressing:

Place all dressing ingredients in a food processor, or high speed blender. Pulse until you have a nice, creamy dressing consistency.

To assemble your bowls:

Add 1/2 cup of cooked grains of your choice to each bowl.

Add twice the amount of greens, about 1 packed cup to each.

Top equally with your cooked chipotle chicken, veggies and garnish with herbs of choice.

Drizzle with dressing and serve!
