The Kitchen Sink Monster Breakfast Cookies
Energy-Packed Breakfast Oat Cookies
12 servings
Ingredients:
- 1 1/2 cups old fashioned rolled oats
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
- 1 cup unsweetened applesauce
- 3/4 cup natural peanut butter
- 2 tsps vanilla extract
- 1/4 cup raw honey or pure maple syrup
Instructions:
Preheat your oven to 350 degrees f. and line a sheet pan with parchment paper.
In a large bowl, add the oats, cinnamon, salt, applesauce, peanut butter, vanilla, and honey.

Stir to combine really well.

Spoon the mixture evenly into twelve portions onto your cookie sheet then slightly flatten and arrange into desired cookie shapes as they will not spread while baking.

Bake for 10-12 minutes just until the tops are slightly golden.

Allow your cookies to cool.

Store your leftover cookies in the refrigerator in an airtight container for a week, or frozen for 2 months.
