Peanut Butter Protein Balls

Makes 20 balls
Ingredients:
- 8 medjool dates, pitted
- 1 cup unsalted roasted, or raw peanuts – your choice
- 1/4 cup smooth peanut butter, all natural
- 2 scoops protein powder of choice
- 2 Tbsp raw honey
- pinch of sea salt
- ( 1 Tbsp coconut flour, or oat flour if needed in case your dough isn’t solid enough to form balls )
Instructions:
Place dates and peanuts in a high-speed food processor, then process on high for about a minute.
Stop to scoop sides down with a rubber spatula.
Add rest of the ingredients to processor. Mix for 1-2 minutes or until your dough is formed. If your dough is not solid enough to form balls, add 1 Tablespoon of coconut flour or oat flour to your processor at this time until it’s just right.
Scoop out a Tablespoon of dough and roll between palms. Repeat with the remaining dough.
Keep in air-tight containers and refrigerate for up to 1 week.
