Easiest Soft Pumpkin & Peanut Butter Cookies

No Flour!

No Grain!

Makes 8-10 cookies

Ingredients:

  • 4 Tbsp Peanut Butter (Don’t use the oily part. Use solid nut butter for these, so they do not become too moist)
  • 1 small mashed banana (do NOT use an overly ripe banana, a new/firm banana works best)
  • 2 Tbsp pumpkin puree 
  • 1/4 cup dark cacao chunks or use Lily’s brand sweetened with stevia
  • 1 tsp granulated stevia or 1 Tbsp. raw honey
  • Pinch of cinnamon (optional)

Directions:

Preheat oven to 350 degrees f

Combine all the ingredients

Scoop by rounded Tbsp onto coconut oil greased cookie sheet.

Press down gently with fork.

Bake in preheated 350 degree oven for 12-14 minutes.

Cookies are very soft. {and soo good!!}
