Sliced Garden Tomato Salad ðŸ…🌞

Here comes the sun! Nothing radiates warm weather + sunny vibes more than a bright red big, beautiful garden tomato.

Often the simplest things are the very best things. Wouldn’t you agree?

This marinated garden tomato salad is as SIMPLE and as FRESH as it gets!

Pretty soon gardens and farmer’s markets will be bursting with ripe juicy heirloom tomatoes…so let’s enjoy them while we can!

This type of simple tomato salad will be on our plates most evenings throughout the summer.

Just add BBQed steak, chicken, or fish, and maybe some sauteed zucchini or summer squash, or a baked potato/yam and you’re set!

I LOVE fresh ripe tomatoes right off the vine, and especially in chopped salads…but it’s always fun to have a few interesting recipes to try out throughout the

Summer when tomatoes are inexpensive and found everywhere!

Since there are only a few ingredients used here, I really recommend using the absolute freshest, highest quality ingredients you can get your hands on…it really makes all the difference.

ðŸ…ðŸ…Did you know that there’s an annual festival in Spain … where people throw 150,000 TOMATOES at each other?!

Which is kind of a waste (but also probably quite fun) because tomatoes are so good for you.

They’re a top source of lycopene, an antioxidant linked to a lower risk of heart disease and cancer.

Interestingly, lycopene may also help protect you from the sun’s ultraviolet rays!

But that’s not their only claim to nutrition fame – they’re also rich in vitamin C, potassium, folate, and vitamin K.

Did you know that one single tomato can supply almost half of our daily vitamin C requirements?! Great news for tomato lovers looking to keep our immune system strong!

👉Eat them in a marinara sauce; salsa, and soup; raw in salads; roasted … â¤ï¸and they are AMAZING sliced just after picking straight from the garden, topped with a sprinkle of sea salt. Yum!

Ingredients:

  • 2 Tbsps extra-virgin olive oil
  • 2 Tbsps high-quality balsamic vinegar
  • 1 Tbsp raw honey
  • sea salt and ground black pepper, to taste
  • 1 lb ripe garden tomatoes
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta
  • 1/2 cup pitted green olives
  • 2 Tbsps fresh chopped parsley or basil leaves

Instructions:

In a small bowl or jar, whisk the oil, balsamic, honey, and a generous pinch of sea salt and pepper.

Slice your tomatoes as desired and very thinly slice your red onions then arrange them nicely on a platter as shown.

Drizzle with your balsamic dressing, then top with crumbled feta, olives, and fresh herbs.

Enjoy immediately, or cover and serve within 2 hours.
