Cucumber Wraps w/ Tuna & Fresh Herbs

Cucumber Wraps w/ Tuna & Fresh Herbs.

{You can use Shredded Chicken Breast, or Turkey Breast in place of the Tuna.}

I only had tuna at my house today, and this is my favorite way to eat it!

For each 1 serving you need:
  • 1 large English Cucumber
  • 4-6 oz shredded meat (tuna, chicken, turkey)
  • 1 Tbsp diced red onion
  • 1-2 Tbsp plain greek yogurt or mashed avocado or both!
  • 1-2 tsp organic prepared mustard
  • 1 tsp fresh squeezed lemon juice
  • 1 tsp fresh or dried Dill

Optional:

  • pinch of sea salt
  • tiny pinch of garlic powder

Directions:

  1. Slice cucumber carefully, lengthwise.
  2. Combine all remaining ingredients, taste test to make sure it’s the way you want it!
  3. Wrap mixture in cucumber.
  4. Secure with toothpicks.
  5. Enjoy!
