Lacinato Kale in Smoky Garlic Sauce
This is literally one of my favorite side dishes EVER, and will be a new addition to our #Family#Thanksgiving table! Makes 6 servings
Ingredients:
- 2 Tbsps avocado oil, extra-virgin olive oilÂ
- 1 medium yellow onion, diced
- 6 fresh garlic cloves, thinly sliced
- .5 cup organic tomato sauce
- 1.5 tsps smoked paprika
- sea salt and freshly ground black pepper, to taste
- 1 cup broth (vegetable, organic chicken, or beef)
- 2 Tbsp red wine vinegar
- 4 (3/4-pound) bunches washed lacinato kale , thick stems cut out, leaves cut into thick
- strips (about 14 packed cups total)
Instructions:
Place a large pot or Dutch oven over medium-high heat and add oil.
Once hot, add onions and garlic and stir until they begin to turn translucent, about 5 minutes.
Add tomato sauce and smoked paprika, broth and vinegar.
Reduce heat to medium and bring to a boil.
Add the kale, cover, and cook for a minute or two, until it begins to wilt.
Stir well to combine and simmer until tender, for about 25 minutes.
Season with sea salt and pepper if needed.
