On-the-go Smoked Salmon Protein-Packed Bento Boxes
I feel like we’re craving lighter meals when it’s hot outside…plus, we’re usually on-the-go so much more!
Quick, balanced meals are important to have on hand, or else we end up “starving” and grabbing something we wish we didn’t eat later on!
Make these your own, using YOUR favorite combos! Keep a few different combos in a cooler on ice for the day!
Makes 4 boxes
Ingredients:
- 10 oz. smoked salmon
- 4 hardboiled eggs
- 1 large English cucumber, cut into sticks
- 4 fresh lemon wedges
- 4 small slices of rye, cut into squares
Instructions:
Divide all the ingredients equally among 4 containers & take with you to the pool, the beach, or the park this Summer!
Keep refrigerated, or on ice until ready to enjoy!
