BLT Egg Wraps 🍅🥬🥓

So, today we have a BLT wrapped in eggs. Weren’t you just saying that you’re craving a GOOD BLT? Oh…maybe that was me 😅

Perfect little food project to try out this weekend for breakfast or brunch or gosh even just a delicious snack – don’t you think?!

It looks a little tricky, but it’s really not! These BLT Egg Wraps turn out PERFECT and I’ve included a short video to show you how easily these actually come together!

BLT Egg Wraps are great if you need something quick & GOOD to make for yourself. And you know what?! This doesn’t need to be reserved only for breakfast time – these wraps make for a satisfying meal anytime!

Thanks to the high-quality protein, veggies, and fats, we feel satisfied for hours!

High protein first thing in the morning can help us to feel better energy and have fewer cravings all day long.

Note: There are many quality bacon options available these days. Look for nitrate free, and humanly raised if possible. We believe there is a place for everything in moderation, and that we can still live a healthy lifestyle without being ULTRA rigid.

We eat bacon a few times each month at our house because it’s something we (REALLY REALLY) enjoy!

➡️How To Make Oat Flour

Oat flour is the simplest flour to make at home, using whole rolled oats (old-fashioned oats) and your high-speed blender or food processor.

2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.

Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

🧀Cheese please:

Instead of buying pre-shredded cheese, I like to find a block of grass-fed cheese or something made locally ON SALE and shred or grate it myself….or better yet enlist one of the kids for this duty.

Many pre-grated varieties are coated in very strange things (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.

makes 2 servings

Ingredients:

  • 4 large eggs
  • 2 Tbsps plain greek yogurt
  • 1/4 cup oat flour or ground oats
  • sea salt and ground pepper, to your taste
  • 4 tsps olive or avocado oil, divided
  • 1/4 cup grated cheese of choice, divided
  • 2 large handfuls of chopped lettuce or spinach
  • 4 thin slices of cooked bacon
  • 1 large vine-ripened tomato, thinly sliced
  • 1 small red onion, thinly sliced

Instructions:

In a medium bowl crack the eggs. Add in the yogurt, oat flour, sea salt, and pepper to taste. Whisk well to combine.

Preheat 2 tsp of oil in a large skillet over medium-low heat.

Pour half of the beaten eggs and allow them to spread to entirely coat the bottom of the skillet.

Cook for 3-4 minutes over medium-low heat, then carefully flip using a large spatula and sprinkle with half of the cheese. Allow it to cook for 2 more minutes, just until the cheese melts.

Transfer your egg ‘wrap’ to a sheet of butcher paper or wax paper.

Top with a handful of chopped lettuce or spinach, cooked bacon, a couple of slices of tomato, and red onion.

Roll it up! Use the paper to help hold everything together while wrapping it up tight.

Repeat with the remaining ingredients to make a second wrap.
