Chicken Club Lettuce Wrap
🍗How to QUICKLY take that leftover chicken from last night, and turn it into a fresh tasty lunch idea you can pack for work or school.
🥗Seems like I always have leftover cooked chicken breasts in the fridge (on purpose) to add to future salads and soups the following day, but sometimes I like to mix things up with these crisp lettuce wraps instead.
⏰️Takes just 5 minutes to make, and you can add anything you like or need to use up at your house. Alfalfa sprouts, bell pepper, cumber slices, and avocado would make for really great additions.
🥓We eat bacon a few times each month at our house because it’s something we (REALLY, REALLY) enjoy!
Note: There are many high-quality bacon options available these days. Look for nitrate-free, and humanly raised if possible. Always read the ingredients so you know what you’re really buying.

Ingredients:
- 1 grilled or roasted chicken breast, sliced
- 1 large vine-ripened tomato, thinly sliced
- 4 Iceberg or Romaine lettuce leaves
- 1 ounce grated or sliced sharp cheddar cheese
- 2 thin slices of cooked nitrate-free bacon
- 2 tsps homemade mayonnaise
Instructions:
Thinly slice your chicken and the tomato.
Lay a 12-inch square of parchment paper on your clean working surface.
Place the lettuce leaves on top of each other, doubled up to create a strong lettuce wrap.
Top with cheddar, chicken, tomato, bacon, and mayonnaise.
Sea salt and pepper if desired.
Tightly wrap your stuffed lettuce like a burrito, using the parchment paper as support as shown in the video.
Slice your wrap in half and serve immediately or pack it in a cooler for lunch. Best enjoyed within a few hours.
