Bacon Wrapped Chicken Jalapeño Bites
A little FUN “night-in” project for ya!
We love making these for our family and friends get-togethers at home!
Holidays, Football Watching, Superbowl Parties, New Year’s Eve….YOUR ENTIRE CROWD will LOVE em!
Jalapeños are spicy chili peppers from the hot pepper family side.
Like all peppers, they’re packed with nutrients and have many health benefits.
Jalapeños also contain lots of vitamin C and vitamin B6.
One compound found in jalapeño peppers is called capsaicin, an alkaloid that gives peppers their spiciness and it is also responsible for many of their health benefits.
So eat these spicy peppers year-round since most grocery stores always carry them, and they are fairly inexpensive too!
Note: There are many high-quality bacon options available these days. Look for nitrate-free, and humanely raised if possible.
We eat bacon a few times each month at our house because it’s something we (REALLY) enjoy! These little bites taste amazing with my favorite homemade ranch dip.
Makes 4-6 servings/20 pieces
Ingredients:
- 1 lb. boneless skinless chicken breasts, cut into 2x1inch strips
- 1 tsp garlic salt, or to taste
- 1/2 tsp fresh ground pepper
- 10 large jalapeño peppers, halved and seeded
- 10 thin slices of nitrate-free bacon, halved widthwise
- 20 toothpicks
- Homemade Ranch Dip (optional)
Instructions:
Preheat your oven to 375 degrees f. and line a large baking tray with parchment paper.Sprinkle chicken with garlic salt, and pepper to taste, then toss to coat.Place a chicken strip into each jalapeño halve as shown, then wrap with a 1/2 slice of bacon and secure with toothpicks.Place on the prepared baking tray leaving some space in between each, so they crisp up nicely.Bake for 18-20 minutes or until chicken is no longer pink and bacon is crisp.Enjoy immediately with this homemade ranch dip!
