Blueberry Cottage Cheese Bake
This deliciously healthy breakfast or snack dish is packed with protein, fiber, and fresh flavor. The creamy cottage cheese, sweet blueberries, and hint of lemon zest will transport your taste buds to a sunny, happy morning!

Ingredients:
- unrefined organic coconut oil or ghee for greasing the dish
- 4 large eggs, room temperature
- 2 cups cottage cheese
- 1/4 cup raw honey or pure maple syrup
- 2 tsps vanilla extract
- 1/4 cup arrowroot powder, oat flour, or cornstarch
- 1 tsp baking powder
- fresh lemon zest of one large lemon
- pinch of sea salt
- 2 cups fresh or frozen blueberries
Instructions:
Preheat your oven to 350 degrees f. and grease a 9×6 baking dish lightly with coconut oil.
In a food processor or a blender, add the eggs, cottage cheese, honey, and vanilla. Blend by pulsing just until well combined and smooth, but don’t over blend.
In a small bowl, whisk together the oat flour, arrowroot, or cornstarch with the baking powder.
Transfer your egg/cottage cheese mixture to a large mixing bowl and add in the oat flour/baking powder mixture, lemon zest, and sea salt. Stir until smooth and combined.
Transfer the batter to your prepared dish, then sprinkle blueberries evenly throughout. Bake for 30-35 minutes or just until it’s set in the center.
Allow to cool before slicing.

Keep leftovers tightly wrapped in the refrigerator for up to 4 days.
