CFC Buffalo Chicken Lettuce Wraps

Often times we’re just craving something really tasty, and if we *knew* that we could easily create that tastiness we’re CRAVING within minutes, then we’d definitely choose a homemade meal over eating out!

These lettuce wraps check all the right boxes when it comes to those satisfying flavor combinations we crave!

âž¡ï¸ Question: Is rotisserie chicken healthy?

âž¡ï¸ Answer: Well, compared with most drive-thru foods…in my opinion, yes, but there are some important things to keep in mind when shopping for rotisserie chicken.

Many rotisserie chickens are injected with seasonings that contain sodium phosphate, modified food starches, potato dextrin, carrageenan, and sugars.

I highly suggest that you read the ingredient labels, and do some research if you’re concerned about preservatives in your diet.

Whole Foods grocers offer an organic, hormone-free, and no added salt, rotisserie chicken that is wonderful.

As another option:

I often keep shredded chicken that was cooked in my crockpot, on hand in the fridge and the freezer for quick recipes like this, but in a pinch, you can use a rotisserie chicken.

Once the chicken is cooked through, simply shred with 2 forks, OR shred for a few seconds in your KitchenAid mixer with the paddle attachment.

On another note:

The actual amount of buffalo hot sauce in this recipe is a personal preference, so start with less, and add more to your own taste, as everyone has different ideas about the spiciness they desire in life…I mean meals

Makes 6 servings

Ingredients:

  • 3 cups shredded chicken
  • 1/3 cup organic tomato sauce
  • 5-6 Tbsps of Tabasco buffalo sauce
  • 1 cup thinly diced celery
  • sea salt and freshly ground black pepper, to taste
  • 1 cup quartered cherry tomatoes
  • 1/2 a small red onion, diced
  • 1/2 cup crumbled blue cheese
  • 12 romaine lettuce leaves

 

Instructions:

Rinse your Romaine lettuce leaves thoroughly and pat the excess moisture with a paper towel, then set aside.

In a large bowl, combine shredded chicken with tomato sauce, hot sauce, and chopped celery; season to taste and stir until well combined.

To assemble, lay lettuce leaves flat onto a large platter. Add spoonfuls of chicken mixture into the center of each leaf.

Top with cherry tomatoes, onions, and blue cheese. Serve immediately and enjoy.
