Tangy Grass-fed Beef Lettuce Wraps + Avocado Cilantro Cream Sauce
I figure we still have a good 6-8 weeks for eating dinners on the patio, and outdoor entertaining.
Let’s enjoy it as much as possible while keeping things SIMPLE with THESE delicious wraps!Makes about 4-5 servings
Ingredients:
- 1 lb. grass fed ground beef
- 1 Tbsp avocado oil, or olive oil
- 1/2 yellow onion, diced
- 2 cloves fresh garlic minced
- 1 yellow bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin seed
- 1 tsp oregano
- 1/2 tsp chili powder
- sea salt and freshly ground black pepper, to your taste
- 1 jalapeno, sliced
- 1/2 cup chopped cherry or grape tomatoes
- butter lettuce leaves for serving
Avocado Cilantro Cream Sauce:
- 1 very ripe large avocado
- 1/2 cup plain Greek yogurt
- 1/4 cup packed cilantro with stems
- 1 jalapeno diced
- juice of 1/2 fresh lime
- 1/2 tsp garlic powder
- sea salt and freshly ground black pepper, to your taste
Instructions:
Place all avocado sauce ingredients into a blender or food processor and process until smooth.
Heat oil in a large skillet over medium-high heat. Add onions and bell peppers; cook for 3 minutes. Add fresh garlic and all seasonings, then saute for about 1 minute, finally add the ground beef.
Brown beef, while crumbling, & stirring occasionally for about 5 minutes until cooked through. Serve beef mixture over lettuce leaves topped with chopped tomatoes, sliced jalapeno and a drizzle of your avocado cilantro cream sauce.
