Greek-Style Quinoa Salad
This quick + flavorful salad is truly great, so double the recipe and you’ll have tomorrows tasty lunch covered!Makes 4 servings
Ingredients
- 1.5 cups cooked quinoa
- 1 bell pepper, diced
- 1.5 cups fresh cherry, or grape tomatoes, halved
- 1 cup sliced cucumber
- 1/3 cup Kalamata olives, sliced
- 1 small red onion, finely sliced
- a small bunch of fresh herbs, like mint, basil, parsley or cilantro, chopped
For the Dressing:
- 2 Tbsps extra virgin olive oil
- Juice of 2 small lemons
- 1 Tbsp raw honey
- 1 small garlic clove, minced
- sea salt and pepper, to your taste
Instructions:
In a large bowl, combine cooked quinoa, bell pepper, baby tomatoes, cucumber, olives, onion, and fresh herbs.
In a small bowl, add the olive oil, lemon juice, raw honey, garlic, salt and pepper.
Whisk well to combine.
Pour the dressing over the salad before serving and toss gently to combine.
Taste and adjust the seasoning if needed.
