Lettuce Wrapped Burritos

Healthy Lettuce Wrapped Burritos IngredientsMakes about 4 servings 

Ingredients:

  • 8 large Iceberg lettuce leaves (from 1 head)
  • 1 lb. ground turkey meat
  • 1 Tbsp avocado oil, or olive oil
  • 2 bell peppers (red and green), diced
  • 1/2 yellow onion, diced
  • 2 fresh garlic cloves, minced
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • sea salt and freshly ground black pepper, to your taste
  • 15-oz. black beans, drained and rinsed
  • 1 cup corn, I used organic frozen corn
  • 1/3 cup shredded cheese, optional
  • a handful of fresh cilantro, chopped
  • lime wedges, to serve

Instructions:

Heat oil in a large skillet over medium-high heat.

Add onion, bell peppers and cook, about 3 minutes.

Add black beans, corn, cheese and season with sea salt and pepper, to taste. Stir to combine.Healthy Lettuce Wrapped Burritos for DinnerLay 2 lettuce leaves side by side, overlapping slightly.

Place about 1/4 cupful turkey mixture in the leaves, then fold short sides of lettuce leaves in first, then roll into a cylinder, as shown — just like a burrito!

Repeat with remaining leaves and taco mixture. Cut in half and enjoy!
