Portobello Baked Eggs
A new, simple egg preparation for all the mushroom lovers in your life!
Makes 2-3 servings
Ingredients:
- 4 portobello mushrooms, stems removed
- 4 free range eggs
- 1 Tbsp avocado oil, or olive oil
- 5-6 cherry tomatoes, cut into halves
- fresh thyme
- sea salt and pepper to taste
Instructions:
Preheat the oven at 350 degrees f.
Lightly brush avocado oil on portobellos and season.
Then place mushrooms stem side up on a greased baking sheet.
Very gently crack open the eggs and carefully place one inside each mushroom, right where the stem was.
Sprinkle with cherry tomatoes, thyme leaves, and sea salt & pepper to taste.
Bake for 15-20 minutes in your preheated oven until the eggs are cooked to your liking.
