Crock-pot Chicken Fajitas
A SUPER EASY idea for your Taco Tuesday festivities! Wait….Taco’s any dang day you want!
So use a small whole wheat or Ezekiel tortilla, OR scoop it all into a crisp butter lettuce leaf, or on top of a big Taco Salad…YUM!Makes about 5 servings
Ingredients:
- 2 lbs boneless skinless chicken breast or tenders, sliced
- 4 bell peppers different colors, sliced
- 1 medium white onion, sliced
- 1 medium red onion, sliced
- 1 (15 oz) jar diced or fire roasted tomatoes with juice
- a handful of fresh cilantro leaves, chopped
- 1 whole lime, juiced
- 2 tsps chili powder
- 2 tsps ground cumin
- 1 tsps smoked paprika
- 1 tsps sea salt
- 1/2 tsps garlic powder
- 1/2 tsps onion powder
- 1/4 tsp cayenne pepper
Instructions:
Add all the ingredients to the bowl of a 4-5 qt crockpot. Stir to combine well.
Cook on HIGH for 2-3 hours, or on LOW for 4-6. (I prefer the LOW setting)
Garnish with additional fresh cilantro and lime wedges then enjoy!
