Chocolate Chip Yogurt Muffins
These delicious muffins make a GREAT all-natural breakfast or snack!
No one will be missing baked treats in the house with this Clean Eating recipe on hand!
Makes 12 muffins
Ingredients:
- 2.5 cups plain Greek yogurt, full fat
- 10 large eggs
- 6 tbsp melted coconut oil
- 2 tsp vanilla extract
- 3 tsp baking powder
- 2 cups almond flour
- 1 cup coconut flour
- 6-8 packets of stevia or sweetener of choice
- 1/2 cup dark chocolate chips
Instructions:
Preheat the oven to 350F.
Line a muffin tin with papers, or spray the tin.
In a bowl, mix yogurt, eggs, vanilla and coconut oil until well combined.
Add all dry ingredients to a separate bowl, and whisk together until combined well.
Then gently stir dry ingredients into the wet ingredients. Mix until well combined.
Lastly, fold in the chocolate chips, reserving some to place on top.
Bake for about 20 minutes or until the tops are browned and a toothpick inserted in the center comes out clean.
