La Scala Chicken Salad
Our rendition of the “La Scala Chicken Salad” is a recipe that loosely mimics the famous chicken salad served at La Scala, a renowned Italian restaurant in Beverly Hills, California.
La Scala’s chicken salad has been a signature dish since the 1950s and is beloved by celebrities and foodies alike.
The original recipe is a closely guarded secret, and there are lots of copycat variations of this salad.
Our La Scala Chicken Salad is a fresh blend of textures and tastes, featuring crisp romaine lettuce, refreshing cucumber, tender chicken, and creamy mozzarella cheese.
The pièce de résistance? A homemade dressing that’s equal parts tangy, sweet, and savory.
With its light, refreshing flavor profile and impressive nutritional benefits, this salad is perfect for a quick lunch, dinner, or as a healthy snack. Take a bite and taste the allure of La Scala’s signature style!
The key to a great Copycat La Scala Chicken Salad is to use high-quality ingredients, chop the ingredients finely, and dress the salad with a light, tangy vinaigrette that enhances the flavors without overpowering them.
What’s my take on processed deli meats?
The studies are very clear.
We should limit our consumption of deli meats due to many possible and/or proven health risks.
At our house we consume deli meats about once a week or sometimes just several times per month.
They are part of our life because preparing EVERYTHING from scratch is simply not going to always happen for this mama, also: we do enjoy eating deli meat!
For the average BUSY family that requires quick staples such as deli meats to get them through the week without grabbing fast food, what do WE look for?!
Here’s my helpful list (and YES, it’s really hard to believe this much crap can be hidden and added into cold cuts!) If possible, choose meats containing:
✅No antibiotics.
✅No nitrates: Sodium nitrate/sodium nitrite
✅No BHA (butylated hydroxyanisole)
✅No BHT (butylated hydroxytoluene)
✅No Smoked/naturally smoked/smoke flavor: Could contain unlisted toxic chemicals.
✅No Corn syrup
✅No Aspartame
🌟Look for humanely raised, pasture raised meats if possible.
🌟Look for lower sodium.
Happy shopping!
And just so you know, I personally believe that we don’t need to be obsessive or ULTRA rigid with our healthy lifestyle…I believe that it’s great to be educated, but even better not to stress over every little thing!
