Pesto Chicken Kabobs

Everyone LOVES food-on-a-stick😁 PERFECT for weekend grilling!

The truth is, we use our BBQ year-round, even throughout the winter.

Kabobs and skewers cook really well on an indoor grill as well, and they are SO fun to make for parties and get-togethers.

I really hope these skewers become a “regular” at your house!

These gorgeous kabobs comes together pretty quickly – if you’re going to make your own homemade pesto (which I REALLY DO recommend!) that will take 5 minutes.

You’ll need 10 minutes to thread your skewers and about 10 minutes to grill them.

So, in just 25 minutes from now, you’ll be enjoying these delicious pesto chicken kabobs!

🌱Each time I make a batch of homemade pesto, I ask myself why I don’t make it more often?!!!

It’s just SO good and really brightens up any meal!

➡️ Homemade Pesto Recipe

Ingredients

  • (10-inch) bamboo skewers or wooden skewers

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 cup fresh homemade pesto sauce, divided

  • 2 cups cherry or grape tomatoes

  • 1 cup pitted green olives

  • sea salt and freshly ground black pepper, to taste

  • fresh basil, chopped to garnish

Instructions:

Place your cubed chicken and 1/2 cup of the pesto sauce in a large bowl and stir to
coat well.

Allow to marinate for at least 20 minutes, covered in the refrigerator.

Soak your wooden skewers in water for at least 20 minutes, so they don’t burn on the grill. Preheat an outdoor grill or an indoor grill pan over medium heat.

Thread the pesto-coated chicken, cherry tomatoes, and olives onto skewers.

Season lightly with sea salt and pepper, to taste.

Grill your skewers, turning occasionally, for about 10-12 minutes, or until the chicken is cooked through.
Garnish with chopped basil and enjoy!
