Pesto Mozzarella Baked Chicken

Juicy chicken breasts smothered in creamy homemade pesto sauce, melty fresh mozzarella cheese, then topped with a vibrant fresh tomato, garlic, and basil mixture.
This impressive dish is easy to make and perfect for a weeknight dinner or special occasion.
With only a few ingredients and simple prep, you’ll be enjoying this mouthwatering meal in no time!
My Delicious Homemade Pesto Recipe:

Ingredients:
- 2 large chicken breasts, cut in half lengthwise to create thinner breasts
- sea salt and ground pepper, to taste
- 1/2 cup homemade pesto sauce
- 2 x 4 oz fresh mozzarella balls
- 2 cups cherry or grape tomatoes, halved
- 2 fresh garlic cloves, minced
- 1 bunch fresh basil, chopped
- 2 Tbsps high-quality balsamic vinegar
Instructions:
Preheat your oven to 375 degrees f.
Sprinkle the chicken lightly with sea salt and pepper, then rub with the pesto sauce and place it in an oven-safe dish, large enough to fit without overlapping.
Bake for 15 minutes.
Break the fresh mozzarella into smaller pieces and arrange over the chicken.
Return to the oven and continue to bake for 10-12 minutes, until the cheese is melted, and chicken is fully cooked through.
Meanwhile, in a small bowl, combine the fresh tomatoes, garlic, basil, balsamic vinegar, and sea salt, & pepper to taste.
Once your chicken is done, carefully remove from the oven. Top with spoonsful of the tomato mixture.
