Pine Nut + Basil Guacamole 🌱🥑

ALWAYS use freshly squeezed lemon/lime juice from a fresh lemon/lime. Bottled lemon juice from the store will give your mayonnaise a strange metallic or overly acidic taste.
Makes 8 servings
Ingredients:
- 1/4 cup pine nuts, toasted
- 1-2 fresh garlic cloves, minced
- sea salt, to taste, about 1/2 teaspoon
- 1/2 cup loosely packed fresh basil leaves, roughly chopped
- 3 medium ripe avocados, peeled, seeded and cubed
- 3 Tbsps freshly squeezed lime or lemon juice
Instructions:
Heat a small skillet over low heat. Add in your pine nuts and cook stirring constantly until golden, just a few minutes.
Pound the garlic in a pestle and mortar with a tiny pinch of sea salt.
Add in your basil leaves, then mash it all into a paste.
Alternatively, you can pulse in a food processor.
Add in your avocados and mash until smooth.
Stir in the lime juice, taste test and season with sea salt and pepper if desired.
Dip fresh slices of veggies such as mini peppers, cucumbers, celery, carrots, broccoli, etc for a healthy snack. Or dollop on top of Ezekiel toast or tacos for a unique flavor combination.
