Salmon + Mango Power Bowls

Sweet Ripe Mango & Savory Salmon are always such a great combo!

These bowls were a quick lunch experiment that (after completely enjoying every last bite) clearly required a permanent spot on the website!

Have a few leftover salmon filets hanging out in the fridge?! Make these bowls! They are GREAT eaten hot or cold!

Don’t skip the dressing! It’s incredible and pulls everything together in the best possible way!

My FAVORITE way too cook salmon is in the air-fryer.

Makes 2 servings

Ingredients:

  • 1 cup cooked brown or wild rice
  • 2 cooked salmon filets
  • 1 ripe mango, diced
  • 1 small avocado, diced
  • 4 green onions, sliced

Dressing:

  • 2 Tbsps extra virgin olive oil
  • 2 Tbsps freshly squeezed lime juice
  • 2 Tbsps rice vinegar
  • 1/2 cup ripe mango
  • 1 Tbsp hot sauce
  • sea salt and ground black pepper, to taste

Instructions:

Divide your cooked rice equally between 2 serving bowls.

Top with flaked salmon, diced mango, and avocado.

In a small food processor, add all the ingredients for your dressing and pulse until smooth.

Drizzle dressing over the bowls, then sprinkle with green onions.

Enjoy!
