Make your own pickled onions:
How To Cook Dried Beans in an Instant Pot:
6 servings
Ingredients:
Roasted sweet potatoes:
- 3 sweet potatoes or yams, peeled and diced into 1-inch pieces
- 2 Tbsps avocado oil, or oil of choice
- 2 tsps smoked paprika
- 1/4 tsp cayenne pepper
- sea salt and ground black pepper to taste
Flavorful black beans:
- 3 cups black beans, rinsed and drained
- 1 Tbsp avocado oil, tallow, or oil of choice
- 1 small yellow or white onion, finely diced
- 3 fresh garlic cloves, minced or pressed
- 3 tsps ground cumin
- ¼ tsp chili powder
- ⅓ cup water
- 1 tsp balsamic vinegar
- sea salt and freshly ground black pepper, to taste
Tacos:
- tortillas of choice
- 2 small avocados, mashed
- 2 Tbsps freshly squeezed lime juice
- sea salt & freshly ground black pepper, to taste
- fresh cilantro
- jalapeño, seeded and sliced
- crumbled feta cheese or cotija cheese
- pickled red onions
Instructions:
Roasted sweet potatoes:
Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.
Add the diced sweet potatoes and drizzle with oil, Sprinkle with the seasonings then toss well to coat.
Roast for 20-25 min, or until fork tender.
Flavorful black beans:
Heat the oil in a skillet over medium heat. Sauté the onions and garlic until they soften a bit, about 3 minutes.
Stir in the beans and remaining ingredients. Cook over medium heat until all liquid is absorbed, 6-8 minutes.
You can mash the beans slightly with a fork or leave as is.
To assemble your tacos:
Quickly heat up your tortillas on the stove top.
Meanwhile, mash the avocado with lime juice and a pinch of sea salt.
Fill your warmed tortillas with roasted sweet potatoes, black beans, and mashed avocado. Top with crumbled cheese, pickled onions, cilantro, and jalapeno.
Serve immediately and enjoy!
