Mediterranean Inspired Burger Bowls

We’ve got fresh Mediterranean flavors piled upon more flavors happening here for you today!

First, the turkey burgers are filled with fresh herbs, feta, grated onions, and garlic…they are so incredibly delicious that they could be eaten all by themselves…but we’re not finished YET!

Second, we’ve chosen fresh veggies to add to the mix to give our bowls some fresh textures, flavors, and nutrients!

Finally, we have an easy-to-make homemade Italian dressing to drizzle on top that pulls this whole combo together PERFECTLY!

You’ll likely want to double the batch of Italian dressing for other meals because it’s REALLY GOOD! It also makes for an EXCELLENT chicken marinade!

âž¡ï¸ Rachel’s tips:

Since there are only a few simple ingredients used here, I really recommend using the absolute freshest, highest quality ingredients you can get your hands on…it makes all the difference.

Feta is Greece’s most famous cheese (and my favorite!) Many say it’s also the healthiest.

ðŸUsually made from sheep or goat milk (or a combo), Feta cheese is nutrient-rich. Feta is said to be easier to digest and less allergenic and inflammatory than cheeses made from cow’s milk, which makes it a good option.

4 servings

Ingredients:

Burger patties:

  • 1 lb ground turkey
  • 1 large egg
  • 1/2 cup crumbled feta
  • 1/2 cup grated onion
  • 2 Tbsps chopped fresh parsley leaves
  • 2 fresh garlic cloves, pressed
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp ground pepper, or to taste

Bowls:

  • 4 heaping cups of chopped greens of choice (I used arugula)
  • 8oz mozzarella balls/ pearls
  • 1 medium red onion, sliced into rings
  • 1 large avocado, quartered and diced
  • 2 cups cherry tomatoes, halved

Homemade Italian Dressing:

  • ¼ cup extra-virgin olive oil
  • 2 Tbsps apple cider vinegar or white wine vinegar
  • 2 Tbsps freshly squeezed lemon juice
  • 2 Tbsps finely chopped fresh parsley
  • 2 tsps raw honey or pure maple syrup
  • 2 tsps dried oregano
  • 1-2 fresh garlic cloves, pressed
  • 1 tsp Dijon mustard
  • ½ tsp dried thyme
  • ¼ tsp sea salt
  • 1/8 tsp freshly ground black pepper

Instructions:

For the dressing:

In a small bowl, whisk together all of your dressing ingredients really well. Taste test, then adjust to your preferences. Set aside.

Be sure to whisk your dressing once again immediately before serving.

For your burger patties:

In a medium bowl, stir all the ingredients for the patties and combine everything really well.

Divide your turkey mixture equally into four. Shape each portion into a patty that’s about 3” wide as shown in the video.

Preheat a grill pan or an outdoor grill over medium heat. Grill your burger patties, turning once, until grill marks appear and are no longer pink in the center, around 5-7 minutes per side.

Once fully cooked, prepare your bowls.

To assemble your bowls:

Place a heaping cup of greens into each serving bowl.

Add remaining ingredients by dividing them equally between each bowl.

Top each bowl with your grilled burger patty.

Drizzle each bowl with 2 Tablespoons of your homemade Italian dressing, and serve!
