Waldorf Chicken Chopped Salad

With a delicious creamy Greek yogurt dressing, crisp fresh apples and celery, sweet grapes, and savory blue cheese, this salad has all the best flavors and textures.

Ingredients:
Dressing:
- 1 cup plain Greek yogurt
- 1/2 cup crumbled blue cheese or any crumbly cheese of choice
- 1 clove garlic, minced
- 3 Tbsps raw apple cider vinegar
- 2 Tbsps extra virgin olive oil
- 1 Tbsp dijon mustard
- sea salt and ground pepper, to taste
Salad:
- 1 crisp apple, thinly sliced or diced
- 4 ribs celery thinly sliced
- 2 cups crisp grapes, quartered
- 2 cups cooked chicken, chopped
- 1/2 small red onion, thinly sliced or diced
- 1/2 cup raw pecans, roughly chopped
- 1/2 cup crumbled blue cheese or any crumbly cheese of choice
Instructions:
In a large bowl, whisk all your ingredients for the dressing until well combined.
Add in all of your remaining salad ingredients.
Toss well to coat.
Enjoy!
