Healthier Chocolate Pudding 🍫
Here’s a really FUN + YUM weekend project for YOU!
Homemade Silky Chocolate Pudding without using a box!
Less processed ingredients, less sugar, and can be made dairy free!
You probably have most of these ingredients already at home.
Unsweetened coconut milk or any unsweetened nut milk works really well to create this dairy-free pudding. For dairy free, be sure to use coconut oil instead of butter.
➡️Cacoa vs. Cocoa
Although they are both completely interchangeable in recipes, they are each processed differently.
Cacao is the purest form of chocolate. It’s an excellent source of antioxidants and has a high amount of flavonoids. Cacao is higher in protein, fiber, magnesium and iron than its cousin cocoa.
If all you have on hand is cocoa powder, then that’s fine to use.
When you have a choice at the grocery store, reach for the lesser processed raw cacao to take advantage of its awesome health benefits in all of your homemade treats!
➡️When shopping for ingredients:
Look for a higher percentage cacao for the chocolate chips, and always read ingredients.
I like to buy the highest quality I can find when they are on SALE! I’m always keeping an eye out for a good deal, and will often stock up when a high quality product is on special.
Use any dark chocolate chips of your choice: the higher cacao percentage, the healthier!
If you’re looking to keep sugars lower; try using Lily’s brand chocolate that is sweetened with stevia.
Makes 4 servings
Ingredients:
- 3 Tbsps Arrowroot powder, or cornstarch
- 1/3 cup cacao powder
- a pinch of sea salt
- 2 cups milk of choice, such as unsweetened coconut milk, cashew milk
- 2 Tbsps ghee, clarified butter, or unrefined coconut oil
- 1/3 cup raw honey, or pure maple syrup
- 1 tsp vanilla extract, or almond extract
- 1/4 cup dark chocolate chips
To garnish:
- dark chocolate
- whipped coconut cream or plain Greek yogurt
Instructions:
In a saucepan whisk to combine; Arrowroot powder, cacao powder, and salt.
Add 1/3 cup of milk and whisk until smooth. Stir in the remaining milk, together with the ghee or clarified butter, honey and vanilla.
Place your pot on the stove over low heat.
Cook the pudding on low heat while gently whisking the ingredients together.
Make sure to stir continuously, scraping the sides of the pan, until the liquid begins to thicken and bubble.
Allow your pudding to simmer for about 1 minute.
Remove from the heat and stir in your chocolate chips.
Whisk until chocolate is melted, and mixture becomes super smooth with no visible lumps.
Divide pudding among pudding bowls.
Refrigerate for at least 2 hours or until set and cool.
Garnish with a dollop of yogurt, or coconut cream, and grated dark chocolate.
Enjoy!
