Ham + Cheese Cracker Sandwiches (CFC Cold Lunchbox Series)
A big request we’re still receiving is lunchbox ideas to tuck into backpacks or purses that’ll stay good for a few hours until lunchtime and do not require heating.
Maybe you’re heading out to watch your kid play ball or dance? Maybe just running errands for the day and want to avoid the drive-thru? Maybe you need to pack something simple for the whole crew?
We’ve got you covered with a few good ideas!
You can always double up the recipes for bigger appetites or use our lunch box ideas as snacks or post-workout meals.
💡Have fun with these and make them your own depending on what’s in season and what you have on hand.
➡️ I used “Simple Mills” crackers for these boxes, but there are quite a few good crackers popping up on the grocer’s shelves these days. Just check ingredients and make sure they’re minimal, no inflammatory oils are used, and organic is always a bonus!
➡️ What’s My Take on Processed Deli Meats?
The studies are clear:
We should limit our consumption of deli meats due to many possible and/or proven health risks.
At my house, we consume deli meats about once a week or sometimes just several times per month.
They are part of our life because preparing EVERYTHING from scratch is simply not going to happen for this momma, also: we do enjoy deli meat!
For the average BUSY family that requires quick staples such as deli meats to get them through the week without grabbing fast food, what do WE look for?! Here’s my helpful list (and
YES, it’s really hard to believe this much crap can be hidden and added into cold cuts!)
If possible choose deli meats containing:

No antibioticsNo nitrates: Sodium nitrate/sodium nitrite
-
No BHA (butylated hydroxyanisole)
-
No BHT (butylated hydroxytoluene)
-
No Smoked/naturally smoked/smoke flavor: could contain unlisted toxic chemicals
-
No Corn syrup
-
No Aspartame
➡️ Look for humanely raised, pasture-raised meats if possible.
➡️ Look for lower sodium.
Good luck shopping! And just so you know, I personally believe that we don’t need to obsess or be ULTRA rigid with our healthy lifestyle…I believe that it’s great to be educated, but even better not to stress over every little thing!

Serves 1
For 1 lunch box you’ll need:
- 4 oatmeal, wholewheat, sprouted seed, or gluten-free crackers
- 2 or 3 slices nitrate-free sliced oven-baked turkey breast
- 1 slice cheddar, quartered
- 1 orange, cut into wedges or triangles
- a small handful of grapes
Optional:
- whole grain mustard or hummus
Instructions:
Between 2 crackers; sandwich a folded slice of oven-baked turkey breast and ¼ of a slice of cheddar cheese.
Assemble your lunch box filling one of the compartments with your cracker sandwiches, and the remaining with fruit.
Keep refrigerated until ready to grab & go.
Stays great in the fridge for about 4 days.
