Beef + Sweet Potato Sliders ðŸ”ðŸŸ

SUPER EASY, just bake in your oven on two separate sheet pans: DONE✔

SUPER DELICIOUS, let everyone pile on all their favorite toppings: DEVOUR 🤤

Sweet Potatoes become such a TREAT once they’re baked up and a lil’ bit crispy. Sweet potatoes & yams are my FAVORITE complex carb because I don’t ever feel yucky or bloated after eating them (like I do with many simple carbs).

Top these sliders off with some Clean Eating Homemade Ketchup or Homemade Mayonnaise.

âž¡ï¸ Homemade Fries to go alongside your sliders:

Makes 6 servings

Ingredients:

  • 3 very large sweet potatoes or yams
  • 1/3 cup cheddar cheese, shredded

BEEF SLIDERS:

  • 1 lb ground beef, or bison
  • 1 tsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp pepper

TOPPINGS:

  • homemade mayo & ketchup
  • avocado, mashed or sliced, or guacamole
  • red onion, sliced
  • 2 tomatoes, sliced
  • lettuce

Instructions:

Preheat your oven to 375 degrees f. and line 2 large baking sheets with parchment paper.

Slice your sweet potatoes into 1/3 inch thick discs. Arrange on one of the prepared baking sheets.

Lightly spray with avocado oil and sprinkle with sea salt and pepper. Bake at 375 degrees f. for 20-25 minutes. Flip them over once during baking time.

Meanwhile, in a mixing bowl, combine all the ingredients for the beef sliders. Stir really well then take large spoonfuls of meat mixture and form into mini patties or sliders.

Lay sliders on one of your prepared baking sheets.

Bake at 375 degrees f. for about 15 minutes, or until meat is done to your liking.

As soon as the beef sliders are ready, remove them from the oven and immediately sprinkle them with shredded cheddar.

To assemble your sliders, lay one slice of roasted sweet potato, then add 1 Tablespoon of mashed avocado, or homemade ketchup & mayo, if desired. Top with one beef patty, lettuce, a slice of tomato, and red onion.

Finish the slider with a second sweet potato disc. Repeat with remaining sliders.

Serve immediately and enjoy!
