Chicken Salsa on Romaine, or Butter Lettuce
10 minutes to Fresh Taco Night!
Makes about 4 servings
- 2 cups cooked diced chicken breast
- 1 cup diced tomato
- 1 can white beans (rinsed)
- 1 small red onion, finely diced
- 2 Tbsps chopped cilantro
- 2 Tbsps fresh lime juice
- sea salt and pepper to taste
Combine ingredients in large glass bowl.
Spread 2 Tbsp freshly made guacamole (per serving) on butter lettuce leaves, top with chicken salsa (distribute chicken salsa equally among servings.)
