🍄What’s your favorite mushroom: button, portobello, shiitake, chanterelles, or …?
Mushrooms have some pretty unique health benefits!

☀️A big example: because they absorb vitamin D from the sun while they’re growing, they pass it along to you when you eat them … making them one of the few natural food sources of this important micronutrient!

Plus, mushrooms are loaded with antioxidants and other nutrients that offer protection against diseases like cancer.

And they may also help you balance your blood sugar and gut health, and can be great for your thyroid and metabolism, too.

Plus, their meaty “umami” flavor and texture make them a good addition to stir-fries, salads, and more!

What’s your take on mushrooms? Love, like, or leave them?

4 servings

Ingredients:

  • 4 large portobello mushrooms
  • 1/4 cup coconut aminos, tamari, Braggs liquid aminos, or low sodium soy sauce
  • 2 Tbsps toasted sesame oil or avocado oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp sesame seeds
  • sea salt and freshly ground black pepper, to taste
  • red pepper flakes if desired

Instructions:

Remove the stems of your mushrooms and gently brush and rinse to clean and pat completely dry.

Prick each mushroom gently with a fork several times to help the marinade evenly penetrate the mushrooms.

In a shallow dish add the coconut aminos, oil, and all seasonings including the sesame seeds.

Place your mushrooms into the dish and baste or brush them all over with your marinade.

Allow them to rest in the marinade for 15 minutes, flipping halfway.

Meanwhile, heat a clean grill pan or an outdoor grill over medium heat.

Grill your marinated mushrooms for about 5 minutes, or until they are just becoming tender, flipping halfway.

Over the last minute of grilling, brush them again with any marinade left at the bottom of the dish.

Sprinkle with red pepper flakes if you desire a little kick.

Slice and serve while hot.
Enjoy!
