Quick + Easy Pickle Sandwich
Well, you either love em’ or hate em’ LOL!
My 15-year-old son ABSOLUTELY LOVES pickles and would eat an entire jar in one sitting if I didn’t stop him!
A Pickle Sandwich is a FUN lunch or snack idea, that can easily be made to your personal taste preferences.
I recommend checking the ingredients on your pickle jars, and being REALLY picky with what you choose because pickles are not all the same. We want to stay away from added sugars, dyes, and other weird stuff. I’ve noticed lots of healthier pickle brands popping up lately at the grocers.
Pickles should simply contain ingredients like vinegar, garlic, herbs, salt, and cucumbers.
Sodium is something you want to look at too…choose pickles lower in sodium, and keep pickles as an occasional treat.
I GREATLY prefer pickles found in the refrigerated section at the grocery store, as often these are fermented, which means we also get a dose of good healthy bacteria for our gut (and overall) health.
You can also make your own pickles!
âž¡ï¸ Here’s our recipe for homemade pickles.
Makes 4 servings
Ingredients:
- 4 large pickles
- dijon mustard, or regular mustard,
- organic ketchup, and/or avocado mayonnaise
- 12 slices nitrate-free turkey, or ham
- thinly sliced cheese
- 1 or 2 large tomatoes, sliced and halved

Instructions:
Place one pickle on your cutting board. Using a very sharp chef’s knife, carefully slice it in half lengthwise as shown.Using a spoon, scoop out the seeds of each pickle halve into a bowl to make a bit of room for your fillings.Next, place your pickle halves cut side up on the cutting board. Squeeze some ketchup or mayonnaise and mustard on one half.Top with slices of turkey or ham, a slice of cheese and tomatoes. Add the other pickle half on top to complete the sandwich.Insert a toothpick into the middle to make it easier to serve.Repeat with remaining pickles.
Serve and enjoy!
