Looking for a quick, easy, and delicious meal that’s packed with nutrients? Our Turkey + Cauliflower Skillet is simple, yet flavorful and combines the lean protein of ground turkey with the vitamin-rich goodness of cauliflower and kale, all in one convenient skillet.

Cauliflower & ground turkey were ON SALE this week at my local market, so this is what I put together for a quick dinner + future lunches.

Don’t let the simplicity fool ya, thanks to the seasonings and fresh lemon juice – this skillet meal is surprisingly DELICIOUS!

Throughout the past several years I’ve made it a HUGE focus of mine to keep our family food budget in check.

We’re making simpler meals and ALWAYS shopping the sales.

It’s almost been a “game” to me to see how inexpensively I can purchase and create my family’s weekly WHOLE FOOD meals.

I’ve enjoyed the challenge, and I’m here to say that eating healthy does NOT have to be expensive.

What does shopping the sales mean?

For me, it means that I have a few ideas for recipes I’d like to make that week BUT I’m VERY flexible. I choose whatever veggie is on sale at the store (OR farmer’s market…or possibly ready in the garden). The same goes for protein. As I’m walking through the store, when I see something is discounted that week…well that then becomes our protein of choice. It’s always a balance between making GOOD choices while also not overspending on items that aren’t as affordable at the time.

This week, I walked into the produce aisle and cauliflower was on sale…so I grabbed 2 heads for the week.

Then, I noticed high-quality ground turkey was on SALE by A LOT.

I had no intention of adding ground turkey to my cart when I walked into the store that day…but the sale price always decides the direction of my weekly meal plans. Especially when it’s a REALLY good sale.

So here we are with a 20-minute, EASY, satisfying one-pan meal idea. Just a few ingredients and very little clean-up. Even after a long day, I can usually still muster the effort to throw together something like this knowing it’s ready quickly and packed with nutrition.

This combo is SUPER TASTY, simple, and protein-packed! You can throw whatever veggies you have on hand in there; I had cauliflower to use – SO GOOD with the kale & fresh lemon juice!

Consider doubling up the recipe for future lunches throughout the week. Stays good in a sealed container for up to 4 days in the fridge.

ALWAYS use freshly squeezed lemon juice from an actual fresh lemon. Bottled lemon juice from the store will give your dish a strange metallic or overly acidic taste. We want this to taste super bright and fresh.

Dive up your servings in airtight containers and store in the fridge for up to 4 days.

4 servings

Ingredients:

  • 1 1/2 lbs. ground turkey or turkey sausage
  • 1 large head cauliflower, chopped into small florets
  • 2 Tbsps tallow, ghee, grass-fed butter, or unrefined avocado oil
  • 2 tsps ground mustard
  • 2 tsps dried thyme
  • 1 1/2 tsps garlic powder
  • 1 1/2 tsps onion powder
  • sea salt and ground pepper, to taste
  • 2 cups packed fresh kale, chopped
  • 1 large lemon, juice and zest
  • freshly chopped parsley, to garnish
  • freshly grated parmesan, if desired

Instructions:

Steam your cauliflower florets in a steam basket just until fork tender, about 5-7 minutes. Don’t overcook, we don’t want them mushy.

Heat the butter or oil of choice in a large skillet over medium heat. Add in the turkey and break up with a spatula as it cooks.

Sprinkle the crumbled turkey with all of your seasonings, and continue to cook for 5-7 minutes, until fully cooked.

Stir in the kale and cook just until wilted.

Add the steamed cauliflower, freshly squeezed lemon juice, zest, parsley and stir to combine.

Season with sea salt and pepper to your taste.

Serve with freshly grated parmesan, if desired.
