Ingredients:
- 1 large fresh, ripe pineapple
- 2 tsps freshly squeezed lime juice
- 1 x 14oz full fat can organic coconut milk
Optional:
- shredded unsweetened coconut, to garnish
- fresh lime zest, to garnish
Instructions:
Cut your pineapple in half lengthwise, leaving the beautiful stem intact and place it cut side up on your cutting board.
With a paring knife, score the inside of your pineapple and scoop out the flesh. Make sure you keep the pineapple bowls intact as shown so that you can use them as serving bowls. Store your pineapple bowls in the freezer until ready to use.
Place your pineapple chunks in a single layer on a parchment paper-lined sheet pan.
Freeze until frozen solid, around 4-6 hours.
Place your frozen pineapple chunks in a blender or food processor. Add the fresh lime juice and coconut milk.
Blend until smooth.
Transfer your soft serve into your frozen pineapple bowls and sprinkle with shredded coconut or fresh lime zest if desired.
Serve immediately and enjoy!
