Tropical Coconut Popsicles 🌴🥥ðŸ
TOTALLY refreshing homemade FROZEN Summertime treats! I LOVE creating my own frozen treats at home so that I know EXACTLY what is in them.
These are REALLY FUN for the kids to get in the kitchen with you and help out since the end result is both delicious and also impressive with the layers! They will feel very excited and accomplished about the finished product.

These tropical fruit-filled ice pops are a taste of the islands. ðŸ So sit back, enjoy a treat outside, and imagine you’re sitting on white sand beaches with a Pina Colada for a minute before someone yells “MOM”!! Oh, wait… maybe I’m talking to myself here 😅
Here’s some more icy treats you’ll want to try:

Ingredients:
- 2 cups unsweetened coconut yogurt or Greek yogurt
- 1 cup unsweetened shredded coconut flakes (let’s do organic brand)
- 1/2 cup pure maple syrup or raw honey
- 1 tsp vanilla extract
- 1-1/2 cups fresh strawberries
- 1-1/2 cups fresh pineapple chunks
- 2 Tbsps chia seeds
- 12 large popsicle molds
Instructions:
Place your yogurt, shredded coconut, maple syrup, and vanilla into a blender and process until very well blended.
Divide this mixture equally among the bottom of your popsicle molds (leaving plenty of space for the remaining layers) then freeze for an hour.
In your blender, add the strawberries and 1 Tablespoon of chia seeds and blend until smooth.
Pour or spoon this strawberry mixture over the frozen coconut mixture into the molds. Freeze for another hour.
Repeat the blending process with the pineapple and 1 Tablespoon chia seeds.
Insert a stick into each mold and freeze for 3-4 hours, or until firm.
Once frozen, serve. Stays good in the freezer for 1 month.
