Tuna Cucumber Party Bites
Maybe you’re like me and have lots of canned tuna or salmon in the pantry? (Yep. This recipe works great with salmon too!)
Maybe you’re also looking for a way to turn that canned fish into a super tasty, and quick lunch or snack for your family this summer?
This is the PERFECT recipe to use up all of those garden cucumbers you may have on hand!
A DELICIOUS and unique lunch, snack, or party appetizer idea!
I made up a quick batch of these over the holiday weekend for our entire crew, and they were gone faster than anything I’ve made in quite a while!
Total crowd pleaser – and EASY as can be!
These are great with shredded chicken or flaked salmon instead of tuna if that’s what you have at home; So experiment and find your FAVORITE way to make em’!
Ingredients:
- 1 or 2 large cucumbers
- 2 (5 ounce) cans or pouches, wild caught tuna, drained well
- 2-3 Tbsps plain Greek yogurt, or to taste
- 1/2 tsp smoked paprika
- 1/4 tsp sea salt, or to taste
- 1/8 tsp black pepper, or to taste
- 3 Tbsps chopped chives
- 1/2 a fresh squeezed lemon + zest
Instructions:
Peel your cucumber, then using a sharp chef’s knife carefully cut into 1/3-inch slices. You should have about 24 slices.
In a bowl, add your tuna, yogurt, paprika, sea salt, pepper and chives.
Using a microplane, grate the lemon zest, and juice your lemon. Pour squeezed lemon and the zest over the tuna mixture.
Mix until your tuna salad mixture is well combined.
Lay half of the cucumber slices on a large platter, and add small spoonful of your tuna salad onto each.
Top with the remaining cucumber slices.
Insert skewers into the middle of each one for easier serving, as shown in the video.
