Waldorf Chicken Chopped Salad

With a delicious creamy Greek yogurt dressing, crisp fresh apples and celery, sweet grapes, and savory blue cheese, this salad has all the best flavors and textures.

Ingredients:

Dressing:

  • 1 cup plain Greek yogurt
  • 1/2 cup crumbled blue cheese or any crumbly cheese of choice
  • 1 clove garlic, minced
  • 3 Tbsps raw apple cider vinegar
  • 2 Tbsps extra virgin olive oil
  • 1 Tbsp dijon mustard
  • sea salt and ground pepper, to taste

Salad:

  • 1 crisp apple, thinly sliced or diced
  • 4 ribs celery thinly sliced
  • 2 cups crisp grapes, quartered
  • 2 cups cooked chicken, chopped
  • 1/2 small red onion, thinly sliced or diced
  • 1/2 cup raw pecans, roughly chopped
  • 1/2 cup crumbled blue cheese or any crumbly cheese of choice

Instructions:

In a large bowl, whisk all your ingredients for the dressing until well combined.

Add in all of your remaining salad ingredients.

Toss well to coat.
