Chicken Caesar Salad Wraps

COMPLETELY DELICIOUS, protein-packed, Caesar “Salad” wrap idea so you can turn your favorite Caesar salad into a more substantial meal.

If you love Caesar Dressing as much as we do, then prepare to be absolutely delighted!

Our homemade Caesar dressing recipe is beyond SPECTACULAR and my favorite salad dressing recipe currently.

This creamy homemade Caesar dressing is incredible drizzled over warm chicken pieces and crisp fresh lettuce and cucumbers. One of those combinations that seem so simple yet it’s something I often forget about and need to make more often. So satisfying and so so good!

Sometimes we just need some simple inspiration to create the spark that makes us want to jump into the kitchen and create a tasty meal for ourselves.

Speedy meal idea any time of the day… not just lunchtime – So pull out these ingredients when you need a QUICK dinner too!

Less than 15 minutes to a big protein-packed wrap of deliciousness…we can’t even get delivery or take-out that fast!

âž¡ï¸ Tortillas hold us together:

First up, choose the best tortilla you can get your hands on, that fits your particular nutritional needs.

Ezekiel, Food for Life, and Siete brands all make varieties I love! Always read through the ingredients. They should be simple and self-explanatory. Often these healthier tortillas have a better taste and texture once heated a bit.

4 servings

Ingredients:

  • 1 Tbsp olive oil or avocado oil
  • 1 lb chicken breast
  • sea salt and ground pepper, to taste
  • 4 sprouted wheat tortillas
  • lettuce leaves of choice
  • 1 cucumber, very thinly sliced
  • 1/2 cup pitted kalamata olives, sliced

For the Caesar dressing:

  • Juice from 1 large fresh lemon
  • 2 Tbsps raw honey
  • 1 Tbsp coconut aminos, tamari, Braggs liquid aminos, or low sodium soy sauce
  • 1 Tbsp dijon mustard
  • 1/2 cup plain Greek yogurt
  • 2 anchovies in olive oil, drained and finely minced

Instructions:

Heat the oil in a large skillet over medium heat.

Season your chicken breast with sea salt and pepper on both sides. Cook the chicken until golden brown and no longer pink in the center.

Alternatively, you can grill the chicken.

Once the chicken is done cooking, allow it to cool, then chop it up.

Meanwhile, in a small bowl, whisk all of your Caesar dressing ingredients together really well.

Place the chicken pieces into a bowl.

Stir in the Caesar dressing using a spatula to get all of it.

Heat your tortillas lightly in the skillet so that they are more pliable.

To assemble your wraps, lay one tortilla on a clean surface.

Top with lettuce, chicken, cucumber, and olives as desired.

Roll up tortillas, slice in half, and serve.
