Nut Butter Chocolate Chip Energy Balls
These little energy balls are super satisfying! Try making them using different nut-butters such as cashew butter, almond butter, or peanut butter.➡️ Rachel’s Tips:
2 protein energy bites or balls each day as a snack is a perfect serving. I love having these on hand as my before or after workout fuel. When shopping for ingredients: Look for higher percentage cacao for the chocolate chips, and your nut butter should really be nothing but nuts, and maybe sea salt. Steer clear of added oils and/or added sugar if possible. Makes 12 balls, 6 servingsIngredients:
- 3/4 cup almond flour
- 1/4 cup ground flaxseed
- 1/4 cup coconut flour
- 1/4 cup oat flour (ground oats)
- 1 Tbsp chia seeds
- 1/2 tsp ground cinnamon
- pinch of sea salt
- 1/2 cup nut butter of choice
- 1/4 cup maple syrup or raw honey
- 1 tsp pure vanilla extract
- 1/3 cup dairy-free, mini chocolate chips
Instructions:
Add almond flour, flaxseed meal, coconut flour, chia seeds, cinnamon and sea salt into your food processor. Pulse a few times until well combined.
Add in the nut butter, maple syrup or honey and vanilla extract.
Process until you have a sticky mixture that holds together well.
Transfer to a bowl and stir in the chocolate chips.
Using a cookie scoop to get even balls, scoop the mixture into your palms and roll it to form a round ball.
Repeat with the remaining mixture. You should have right around 12 energy balls.
Store in a container fitted with a lid and refrigerate for up to 2 weeks, or freeze for up to 2 months.
