It’s fresh cucumber season! Our vines are full of fresh-crisp cucumbers this time of year! If you don’t have a home garden then be sure to visit your local Farmer’s Markets because they’re overflowing with the best tasting cucumbers throughout the late Summer months.
I really enjoy cucumbers, especially those grown in a home garden. They’re refreshing, hydrating, and ultra-crisp!

Best Healthy Cream Cheese
On occasion we DO ENJOY a creamy snack or meal using real cream cheese at our house. This might only happen a handful of times each year…but we sure do love it!
My favorite brand of cream cheese is pasture raised “Organic Valley.”
For this recipe I REALLY recommend using the cream cheese, but Plain Greek yogurt also works.
I haven’t tried making a dairy free version of this particular recipe, as everyone in my family does enjoy dairy here and there.

Ingredients:
- 1 or 2 large cucumbers, sliced into 1/4inch rounds
- 1/4 cup organic cream cheese, cold from the fridge
- 6 oz can tuna or salmon, drained well
- 1 jalapeño, thinly sliced
- 1 Tbsp toasted sesame seeds
- 1 Tbsp finely chopped fresh parsley or cilantro
Spicy Mayo:
- 3 Tbsps homemade mayonnaise
- 2 Tbsps hot sauce of choice
Variations and Substitutions
Dairy free: For a dairy free cucumber bite, swap the cream cheese for a dairy free alternative of your choice. For best results, you will want it to have a similar texture and taste.
No Spice: While I love spicy snacks, I realize not everyone does. So these snack bites are really easy to make less spicy. Just remove the jalapenos all together and take the hot sauce out of the mayonnaise. Instead try something different like a garlic mayo, avocado mayo, or cilantro lime mayo.
Cucumber Swap: This tuna recipe also works using summer squash or zucchini slices, air fryer or baked sweet potato slices, lettuce boats, or even bell pepper boats.
Sushi Bites: Turn these spicy tuna cucumber bites into spicy tuna and avocado cucumber sushi bites by adding some diced avocado to the top.
Instructions:
Lay your cucumber slices on a serving platter or board.

Spread each cucumber with about 1 teaspoon of cream cheese, a small spoonful of tuna, jalapeño slices as desired, and a tiny sprinkle of sesame seeds.


In a small bowl whisk together your mayonnaise and your favorite hot sauce really well.
Lightly drizzle this homemade spicy mayo over your tuna cucumber bites. I snipped off a teeny tiny corner of a bag then filled it with my spicy mayonnaise to get this nice even drizzle.
Garnish with finely chopped fresh herbs.

Can I make these spicy tuna cucumber bites ahead?
These are actually a great make ahead snack or appetizer. My recommendation would be to assemble the tuna cucumber bites on a platter or in a storage container with all the ingredients except for the spicy mayo. If the bites are on a platter, cover them loosely with plastic wrap until ready to serve. Then right before serving, drizzle the bites with the spicy mayo.
If you are using these as a healthy snack, then drizzle the mayo on right before you eat them.

No, these are a no bake snack or appetizer that is ready in minutes. Perfect for a last minute appetizer idea using pantry staples.
