A Salad People Actually Want.

Cilantro Garlic Lime Shrimp

Serves 4

Simple Directions:

1.  Preheat oven to 375 degrees

2.  In a large bowl combine:

  • 1 lb large raw shrimp peeled & deveined, tails on (rinsed & pat dry)
  • 2 Tbs olive or melted coconut oil
  • 1 bunch coarse chopped cilantro
  • juice of 2 limes
  • 4 cloves minced garlic
  • 1 tsp sea salt

3.  Combine all ingredients, lay on flat sheet pan.

4.  Bake 10-11 minutes in your preheated 375 degree oven until shrimp are fully cooked  ♥

Roasted Fresh Corn & Jalapeños Recipe:
Roasted Fresh Corn & Jalapeños Recipe

This is goes on the salad. It smells so good while roasting!

Preheat oven to 350 degrees f

  • 4 ears of fresh corn, corn removed from the cob
  • 4 medium jalapeños, seeded & sliced into rings
  • 2 Tbs extra virgin olive oil
  • sea salt to taste

Combine well, lay on flat sheet pan, roast in preheated 350 degree oven for about 20 minutes.  Perfect.

Simple Cilantro Lime Dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp water
  • Juice of 2 fresh squeezed limes
  • 2 cloves garlic minced
  • 1-2 Tbs chopped cilantro, depending on preference
  • 1 tsp sea salt

{Whisk or blend well, Serve immediately}

I like to arrange everything in a bowl with fresh veggies, cherry tomato, and avocados, the dressing on the side.  Delicious.
