Parmesan Baked Zucchini Rounds
A super FUN snack idea for all of those garden zucchini! Makes about 4 servings

Ingredients:
- 2 medium zucchini, sliced into 1/2″ rounds
- 2 Tbsps melted ghee or clarified butter
- 1 tsp Italian seasoning
- 1/2 tsp garlic salt
- 1/3 cup ground parmesan cheese
- ground black pepper, to taste

Instructions:
Preheat your oven to 425 degrees f. then line 2 large baking trays with parchment paper. Add zucchini slices to a large bowl. Sprinkle with seasonings, ground parmesan, and drizzle with melted butter/ghee. Toss to get your zucchini coated.
