Sweet Potatoes:
- 2 large sweet potatoes or yams, cubed small
- avocado oil spray , or 1 Tbsp avocado oil
- 1 Tbsp taco seasoning
Fresh Salsa/Pico:
- 4 large tomatoes, diced
- 1 poblano or jalapeno pepper, seeded and diced
- 1 red onion, diced
- 1 bunch chopped fresh cilantro
- juice and zest of 1 fresh lime
- sea salt and ground pepper, to taste
Instructions
- Preheat your oven to 400 degrees f. and line a baking sheet with parchment paper.
